If you’ve spent time with our list before, you may notice something different this time around. This isn’t a seasonal adjustment or a small reshuffle, but a deliberate evolution in how we approach our beverage offering.
Our list is transitioning to an all-Australian selection – wines, spirits, beers and non-alcoholic offerings sourced from producers across the country, with a strong focus on those here in McLaren Vale and the broader South Australian region. You’ll still notice a small number of European wines throughout the list, though these represent the final remaining bottles as we complete that transition through 2026.
For years, like many restaurants, we looked outward. Burgundy, Barolo and Champagne shaped the global conversation around wine and deeply influenced my own journey and understanding of what great wine could be. But over time, a question kept returning: if we’re surrounded by growers producing thoughtful, expressive wines with real character and identity, why weren’t we celebrating them with the same confidence?
The turning point came after a tasting with Steve Pannell. The wines were precise, expressive and unmistakably world class. In that moment, the decision felt less like a risk and more like a responsibility.
This shift is about more than what’s in the glass. It’s about supporting an industry and a community we believe deeply in. Australian producers, particularly small growers and winemakers, are farming thoughtfully, taking risks and quietly pushing quality forward. If we can help connect their work to your table, then we feel we’re contributing to something meaningful.
It also brings our beverage philosophy into closer alignment with the kitchen. Karena and the team cook with a strong sense of seasonality and place, guided by the Kitchen Garden, local produce and long-standing relationships with growers and suppliers. Sustainability informs the way we operate, and over time it became clear that serving wines shipped from the other side of the world no longer reflected that philosophy as honestly as it once had.
What remains unchanged is the spirit of the list itself: balance, discovery and a sense of enjoyment. With the help of Coravin, we’re able to offer a broad range of wines by the glass, giving you the freedom to explore, follow your curiosity and perhaps discover something unexpected along the way.
There are incredible stories throughout these pages – wines of texture, energy, precision and depth that speak clearly of where they come from. We hope this list encourages a deeper connection to the people, places and stories shaping Australian wine today.
